On one side ,drying technology is a major energy cosumer used in many industries including :agriculture, biotechnology ,food ,textile mineral ,pharmaceutical,pulp and paper ,ploymer wood and other.It is also perhaps the oldest chemical engineering unit operation.Drying aims at reducing the moisture content within a product by application of thermal energy to produce dried products of desierd attributes. Control of dryers was mainly manual in the early days ;automatic control appeared only more recently in indstrial drying equipment ,especially with the introduction of PID cpntrol (the dirst paradigm in control) in 1942 by Ziegler and Nichols ,Whereas control techniques have been widely used since the middle of the 1970's in the chemical industry,the number of applications of control in drying is still relatively , and with the complexities of transport phenomena involved in drying ,no single controller can be applied to all dryers .Morever most of the research is still focused on the understanding of the drying mechanisms and and products quality rather than on control of the operation itself ,Therefore ,it is not surprising to see that relatively few published works deal with control aspects in drying .In the meantime one has to note that the major cost of dryers is not very important and that with deeper understanding of the drying ,new "smart" dryers can be made more reliable and more cost-effective than calssical dryers.
The choice of method of drying equipments

When choosing drying equipment, we must take into account ancillary equipment. That`s because the drying system is composed of drying equipment and ancillary equipment. Ancillary equipment is also critical to choose whether or appropriate link. Under normal circumstances, drying system mainly consists of ventilation equipment, heating equipment, the host (drying equipment), gas-solid separation equipment, feeding equipment, etc. The provision of the rise of energy expense and of pollution restriction, working condition and safe operation directly affect the design and choosing of the drying equipment. Continuous production of lime juice by vacuum drying

Lime (Citrus aurantifolia) is an important agricultural product in Thailand. Lime has been used to prevent scurvy, a disease caused by a deficiency of vitamin C. Traditionally, lime has been used as a remedy for indigestion, heartburn and nausea. It also has cooling effects on fevers and can help ease coughs and various respiratory disorders (3), (7). The preservation or modification techniques of lime during seasoning are necessary in order to preserve lime for off season, apply for other purposes and also to control the price of lime. In this study, the vacuum dryer technique is designed to produce lime juice powder in order to preserve lime products. Vacuum drying is one of the best methods for food drying equipment and producing final products of highest quality as comparing to other drying technologies. Besides, as the moisture content of products is reduced, the process temperature is decreased and most of the deterioration and microbiological reactions are also ended. Therefore, both preservation and value-add of high-value food are achieved by using this technology (9), (10). The question is often asked, [How can more capacity be gotten from our spray dryer?" Or, [What is the greatest amount of powder that this dryer can produce?" Optimization of a spray dryer most often means greater capacity, greater energy efficiency, and lower manpower input. Optimization is a complex and multifaceted goal that is best looked at in three ways. First, one can address the question from the standpoint of maximizing any single hour of production-that is, by maximizing inlet temperature, outlet temperature, feed temperature, feed solids, etc. This procedure can be both theoretical and scientific. The second way to address the problem is on a monthly basis. In a 30-day month, there are 720 hours during which a dryer can run. How many hours per month is it in fact running? How many hours per month are lost to clean in place (CIP)? How many hours are lost to process-related problems such a plugging, build-up, etc.? In many cases, more production can be achieved by reducing downtime than by trying to operate each production hour close to the theoretical maximum. The third, and often overlooked, approach is to maximize dryer production on an annual basis based on changes in ambient conditions. Spray dryers almost always run better in winter than in summer.
